Less Sugar. Just for JYU.

Every loaf starts the same way. With patience you didn't know you had, and a tolerance for failure you had to build from scratch. Hundreds of loaves in and out of the oven. Different ratios, different temperatures, different bake times. Some came out dense as regret. Some crumbled at the touch. Some were close enough to hurt, almost there, not quite, try again. We sliced and tasted and argued over crumbs. We kept notes like evidence. Some days felt like we were onto something. Other days felt like the idea itself was the problem.

Sugar was the hardest fight. The easy move was to add more. More always works, in the short term. But we didn't want easy. We wanted honest. So we learned to listen to the banana instead, how ripe, how ready, how much it had left to give. Timing became everything. The moment the fruit went in. How long it stayed. How heat could carry sweetness forward without burning it to nothing. We were chasing a feeling more than a formula. That specific comfort, that depth, that thing that makes you close your eyes on the first bite.

Slowly, it started to make sense. The banana doing more of the work. The oven doing less of the damage. In the end, refined sugar down forty to fifty percent, without losing a single thing that made it worth eating. No compromise on moisture. No compromise on warmth. This loaf wasn't clever or rushed. It was tested, failed, pulled apart, and rebuilt until it stopped needing to be explained. Until it simply felt right. That's the one we're proud to put in your hands.
